Ingredients
For the pastry
250
gr. flour
½
tablespoon brown sugar
¼
teaspoon baking powder
¼
teaspoon salt
125
gr. butter, cold and cut into cubes
3
tablespoons cold water
For the filling
200 gr. Brie cheese, remove rind and cut into
thin slices
3 pears, washed, unpeeled, seeded and sliced
20 gr. brown sugar
1 tablespoon water
salt
Method
1.
Preheat oven to 200ºC

Sift the flour into a bowl with the sugar, baking powder and salt. Add the
butter and rub into the mix until it resembles crumbs. Slowly add enough
water to form a thick dough. Shape into a ball, cover in Clingfilm and leave in
the fridge for 30 minutes.

Roll the dough on a lightly floured surface and transfer onto a pie pan. Pinch
the pastry with a fork.
4.
Arrange the Brie on the pastry and cover with the pears.
5.
Mix the brown sugar with the water and pour over the pears. Sprinkle with a pinch of salt.
6.
Bake for 30-40 minutes at 200ºC until the crust is golden brown and the Brie is
bubbling.
7.
Reserve for 10 minutes before serving warm.
